If it had to be changed then its not by choice. Which also means they must keep that in mind for other moves.
It bothers me a great deal. You can get away with a lot in a teen rated game. I don’t think the question is “why can’t MS/IG show the kills?” It’s “why are they ‘choosing’ not to show the kills?” Why are they taming a game called “Killer” Instinct?
It is possible that the standards for a T-rating had changed for sometime. As long no one is getting dismembered I think you could still get away, but apparently that was their decision. You’ll need to talk to them to get an Adam about the whole thing and he will give you an answer.
Although even I doubt Primal Rage would get away with a T-rating like it did today.

Who is treating it differently though? Is it the ESRB, or is it Microsoft or Iron Galaxy? I don’t quite understand this assumption people have that KI is being censored or as you put it, being treated differently.
What if this is how MS wants to present the game? Can they not express their creative freedom over their IP? Just because other games want to push the T rating or the MA rating as far as it’ll go, to its absolute limits, why does that automatically mean that MS and IG have to do that with this game as well?

Why though? Why does it bother you a great deal? What is it about MS exercising control over their own IP that bothers you so much?
They’ve determined the path for this game and I think they’ve been pretty consistent since the first season. They don’t want tons of T&A for the women. They don’t want any racial stereotypes. They want violence, but not to an extreme. They want this to have a T rating and they seem to have their own specifications for what fits under thier own standards within the T rating. Should it be at all surprising then that not showing kills falls under that umbrella of things they don’t particularly feel the need to have?
Personally, I think that the violence in the old KI games wasn’t over the top, at least compared to Mortal Kombat at the time, but I think that showing modernized versions of some of the more violent stuff that they showed in the old games would probably get this game smacked with an MA rating, so maybe that’s why they’re taking a different route.
At the end of the day, I don’t think this game has lost a lot in terms of “darkness” or even violence. But if you disagree though, that’s fine. I’d rather see a more stylized off-screen kill or implied death than guts splattering everywhere, which KI never had before to begin with. I don’t think “showing the deaths” makes any of this better or cooler to a degree that it’s something to get flustered about, but if you disagree, then have at it. Won’t change anything, though I’m sure you realize that.

Why are they taming a game called “Killer” Instinct?
“Killer instinct” is a colloquial expression. It doesn’t mean an “instinct to kill.” It means drive or determination; a mental toughness or go get em attitude. So the fact that the word “Killer” is in there doesn’t have any baring whatsoever on what the content of the game should be.
It’s defined by Merriam Webster as “a ruthless determination to succeed or win.” Killing has nothing to do with it.
The ESRB is really weird. You can be flexible with some things, and not so flexible with some things.
It may just be me, but with the way they’ve been doing everything in KI in regards to content it feels like to me their approach has been to make the game mature enough to be enjoyable for adults, but not so edgy that if a 3-year-old walked into the room you have to scramble to go shut it off or risk traumatizing the kid (MKX) or have to explain to their daycare why they’re all of a sudden telling everyone “I’ll kick your @ss!!” (R. Mika’s intro, SFV).
To you young whippersnappers that just got out of diapers and are wanting to prove you’re big boys and girls now by surrounding yourselves with any content labeled “adults only” this may seem a foreign or limiting concept to have a game intentionally not go as extreme as it can go, but for those 20+ year fans that are all grown up with lives and families, MS/IG’s forthought to keep the edgyness toned down just enough that we can enjoy KI even with the rugrats scurrying around in front of us is very welcome.

I’m hoping ARIA gets a tagteam Ultimate ala Noob Saibot or MKX TriBorg.

For some characters yes due to their body type But for the most part it’s subtle enough to where it looks more like a gut punch than impale.
for your first question, I’m not 100% sure who’s been treating it differently. I keep hearing different things. In regards to the comment you quoted though I was typing under the impression that it was the esrb. if it is then its not too surprising since they have a history of making no sense and being inconsistent. In which case I just wish they’d make up their minds so that everyone can have a clear and understandable idea of what to expect.
if its Microsoft, well its only natural people would react a certain way since the roots of the series established that it was okay with on screen death and other things. because it was established already, returning players naturally expect that. Of course if it is because of MS then that means IG is just doing what their told and can’t do anything about it.
on the other hand if IG is allowed total freedom and never actually had any limitations, then it means they changed what was established on their own, however it also means moving forward there is a possibility that maybe they could be a bit more daring. This particular scenario means that those who have been asking for a different approach to the ultimates have some hope of it happening,
