Is there is an easy way to fight a particular shadow? How can I fight the shadows on my friends list?

I haven’t been able to figure this out yet.

Also is there a way to face the shadows of certain twitch streamers like Max, LCD, PaulB, Rico, and etc?

There isn’t one yet, you have to search through the Shadows. You could try adding those people to your friends list and challenging them from the Lab, haven’t tried it myself though.
As for challenging friends, its simple enough, you can choose Challenge Shadow and go to Sort By Friends.
